Blueberry Buckle
Ingredients:
- 2 cups flour
- 2-1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup Crisco
- 3/4 cup sugar
- 1 egg
- 1/2 cup milk
- 2 cups blueberries, divided
- 1/2 cup flour
- 1/2 cup sugar
- 1/2 tsp cinnamon
- 1/4 cup butter, cold – cut in pieces
Directions:
- Preheat oven to 350
- Grease bottom and sides of 9x9x2 baking pan, set aside (I use parchment in the bottom of the pan)
- Combine the 2 cups of flour, baking powder, and salt – whisk together – set aside
- In mixing bowl combine Crisco and sugar – beat until fluffy
- Beat in egg
- Alternately add flour and milk, beating smooth after each addition
- Carefully fold 1 cup of blueberries in batter
- Spoon mixture into prepared pan – sprinkles with remaining berries
- In another bowl, combine remaining flour, sugar, and cinnamon
- Cut in butter until it resembles crumbles
- Sprinkle over blueberries
- Bake for 50 – 60 minutes
- Cool slightly, serve warm
