Blueberry Buckle

Ingredients:

  • 2 cups flour
  • 2-1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup Crisco
  • 3/4 cup sugar
  • 1 egg
  • 1/2 cup milk
  • 2 cups blueberries, divided
  • 1/2 cup flour
  • 1/2 cup sugar
  • 1/2 tsp cinnamon
  • 1/4 cup butter, cold – cut in pieces

Directions:

  1. Preheat oven to 350
  2. Grease bottom and sides of 9x9x2 baking pan, set aside (I use parchment in the bottom of the pan)
  3. Combine the 2 cups of flour, baking powder, and salt – whisk together – set aside
  4. In mixing bowl combine Crisco and sugar – beat until fluffy
  5. Beat in egg
  6. Alternately add flour and milk, beating smooth after each addition
  7. Carefully fold 1 cup of blueberries in batter
  8. Spoon mixture into prepared pan – sprinkles with remaining berries
  9. In another bowl, combine remaining flour, sugar, and cinnamon
  10. Cut in butter until it resembles crumbles
  11. Sprinkle over blueberries
  12. Bake for 50 – 60 minutes
  13. Cool slightly, serve warm
